Lemon Garlic Rooibos Chicken

A delicious slow cooked meal.

Prep Time: Prep time: 10 min. Cook time: 2 hours
Serving Size: serves 4
  • 1 c. rooibos tea, brewed
  • juice of 1 lemon
  • 1/2 tbsp. olive oil
  • 3 cloves garlic, chopped
  • 4 boneless chicken breasts, chopped into large chunks
  • 1/2 c. carrots, sliced
  • 1/2 c. green beans, cut
  • salt and pepper to taste
Combine tea, oil, lemon juice, and carrots in a crock pot, and cook on high for 30 min. Add the chicken and cook 1 hour. Add the green beans and cook 30 more min. Serve over rice or couscous.
