Rooibos Spice Chicken

A red bush tea spice rub that can be used on poultry, fish, or red meat.

Prep Time: To make rub: 5 min. To make chicken: Prep time: 15 min. Cook time: 35 min.
Serving Size: serves 2
  • For the rub:
  • 1 tbsp. rooibos tea leaves
  • 1 tsp. crushed sea salt
  • 3-4 sprigs of fresh thyme
  • paprika to taste
  • 1/2 lb. of chicken, preferably boneless breast
  • 1 large carrot, diced
  • 2 celery stalks, diced
  • 1/4 c. of diced chives, sliced
  • 1 tbsp. olive oil
  • 1/2 c. water
Combine rub ingredients and grind them in a coffee grinder.
Rub the chicken in olive oil and the spice rub as prepared above.
Preheat oven to 350°F.
Place rubbed chicken in a greased glass baking dish. Cook for 15 min.
Add carrot, celery, and chives to the chicken with the 1/2 c. of water.
Cook another 15-20 min. until chicken is done.
