Red Tea Spice Chicken

A Red Tea spice rub that can be used on poultry, fish or red meat..shown here with chicken.

Prep Time: 3 minutes for Red Tea Spice Rub
Chicken recipe: 15 minutes prep/35 minutes cooking time
Serving Size: 2
  • Red Tea Spice Rub
  • 1 Tbl of Rooibos
  • 1tsp crushed sea salt
  • 3-4 sprigs of fresh tyme
  • 3-4 dashes of paprika to taste
  • 1/2 lb of Chicken, preferably boneless breast
  • 1 large carrot
  • 2 celery stalks
  • 1/4 cup of diced chives
  • olive oil
  • 1/2 cup of water
Blend the Red Tea spice blend together. Grind in a coffee grinder (used for herbs and cooking only)

Marinate the chicken in olive oil and rub in the Red Tea Spice Rub as prepared above.

Preheat oven to 300

Place rubbed chicken in a glass pan, being sure to cover the bottom of the pan with olive oil. Cook for 15 minutes.

Dice carrot, celery and chives. add to the chicken with the 1/2 cup of water.

Cook another 15-20 minutes until chicken is done.
