Lapsang Salmon and Rice

Great as a cold salad with crackers or as a healthy entree.

Prep Time: 30 min.
Serving Size: serves 8
  • 2 c. cooked black rice
  • 1 c. hot water
  • 1 tsp. lapsang souchong tea leaves
  • 1/2 c. pimentos
  • 1/2 c. sweet pickle relish
  • 1/2 c. salad dressing of choice
  • 2 c. canned salmon (skinless and boneless)
  • 1 c. crushed Doritos chips
  • 8 large bell peppers, any color, tops and insides removed
Brew tea in hot water and let steep 5 min. Strain and allow to cool.
Combine tea, salad dressing, relish, and pimentos in large bowl. Add rice and salmon, mixing thoroughly until well blended. Crush Doritos chips finely and mix in to season. Stuff the mixture inside oranges or bell peppers. Bake in 350°F oven for 15 min. Serve as a hot entree or a unique chilled salad.
