Spearmint Limoncello Granita

This is a light finish to a heavy holiday meal or a refreshing summer dessert.

Prep Time: Prep time: 10 min. Chill time: 4 hours
Serving Size: serves 6
  • 4 tsp. spearmint tea leaves
  • 2 c. water
  • 1/2 c. sugar
  • 1 tbsp. Limoncello
Boil water and add sugar. Stir until sugar dissolves. Add spearmint tea leaves and remove from heat. Steep 5 min. Strain tea into a 9" metal cake pan. Stir in 1 tbsp. Limoncello. Place pan in freezer.
When mixture begins to freeze, rake fork over mixture to start forming ice crystals. Repeat this process about every 30 min. until the ice is the consistency of a snow cone.
Scoop onto a plate or bowl and serve.
