Salmon Ochazuke

This traditional Japanese dish is easy to prepare and perfect as a light lunch or snack.

Prep Time: 15 min. (assumes rice is already cooked)
Serving Size: serves 4
Ingredients
  • 4 c. cooked white or brown rice
  • leftover cooked salmon or 1/2 a can
  • 1 sheet nori (dried seaweed), cut into thin ribbons
  • 4 lightly salted Asian rice crackers
  • sea saltĀ and pepper to taste
  • pinch toasted sesame seeds
  • green or genmai tea, prepared in a teapot
Directions
Prepare enough rice to make 4 c. cooked, or heat up leftover rice.
Fry canned salmon in olive oil. Season with salt and pepper.
Crush rice crackers in a Ziploc bag and add nori strips.
Sprinkle the rice crackers and nori over the rice. Add salmon and sesame seeds.
Pour green tea over the whole thing. The rice should be porridge-like but not runny.
Add salt to taste.
