Irish Tea Soda Bread

Beautiful quick and easy bread to serve at tea time or when company drops by.

Ingredients

  • zest and juice of 1 lemon
  • 1 c. milk
  • 1 1/2 c. Irish tea, brewed
  • 3 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tbsp. sugar
  • 1/4 c. raisins

Directions

Preheat oven to 400°F.

Combine milk, lemon zest and juice, sugar, and brewed tea. Set aside. Combine the flour, baking soda, and salt. Stir to combine wet and dry ingredients until a soft but not sticky dough forms, adding more flour or milk as needed. Add raisins. Pat the dough into a round and cut a cross on it to let the fairies escape.

Bake about 30 min. or until nicely browned and when tapped sounds hollow.

    Very lemony, but almost inedibly dense. The taste isn't the one I'm used to, but the texture... its so bad, even though I added an extra cup of flour, its so dense it won't even absorb any butter.
