9 h 100

Ingredients

  • Sugar syrup:
  • 3 cups sugar
  • 1/2 cup honey
  • 1/2 cup water
  • Pinch cream of tartar
  • Cornstarch mixture:
  • 1 cup cornstarch
  • 1 cup powdered sugar
  • 2 1/2 cups water
  • 1 teaspoon cream of tartar
  • Flavoring:
  • 2 1/2 teaspoons strong brewed daydream tea
  • 2-3 drops food coloring, optional
  • 1/2 cup cornstarch mixed with 1 cup of powdered sugar

Directions

Grease a sheet of foil and press it into a 9x13 pan.

Combine the sugar syrup ingredients in a medium saucepan;bring to a boil and cook to 260.

While syrup is cooking, combine the cornstarch, powdered sugar and cream of tartar in a large saucepan;slowly add the water and bring to a boil, stirring constantly. Turn the burner off and leave the pan on the burner, stir occasionally make sure to scrape the bottom of the pan. When the syrup reaches 260,carefully pour into the cornstarch mixture and bring back to a boil, reduce the heat and simmer until thick, gluey and light golden;about 30-45 minutes. Remove from heat and stir in the tea and coloring if using(I didn't use any as the tea gave it a nice pink color); pour into pan and evenly spread it out. Cover it with plastic wrap, making sure the plastic is on the surface of the gel so a skin doesn't form. Let sit 6-8 hours, until its completely cool and firm. Turn out onto a powdered sugar covered cutting board; cut into 1in pieces and dredge in the powdered sugar and cornstarch mixture. Store in an airtight container with waxed paper in between the layers.

Why have I never made this before!? Most of the challenge is waiting, because wow are these tasty! They're so easy even though they look tricky.
