Irish Tea Bread

Traditionally eaten in Ireland while enjoying a cup of tea. This bread has a wonderful flavor of tea and fruit that can be enjoyed any time of day. Prep time: 30 min. Soak time: overnight Cook time: 1 1/2 hours

Ingredients

  • 3/4 c. well steeped Irish Breakfast tea
  • 1 lb. mixed dried fruit
  • 6 oz. soft brown sugar
  • 1 egg
  • 2 tbsp. melted butter
  • 2 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/4 c. raw cane sugar

Directions

Cut up fruit to raisin size if it's larger. Place tea, fruit, and sugar in bowl. Cover and leave overnight. In morning, stir in egg and melted butter. Sift flour and baking soda and fold into liquid. Grease a loaf pan with butter and flour. Pour in batter. Bake at 360°F for 1 1/2 hours. Remove from oven, and when partially cool, top with raw sugar.
